3. In another bowl, Beat the eggs with the honey and coconut oil. Add the grated carrot.

4. Add the dry ingredient mixture into the wet ingredients and mix well..

5. Add the chopped walnuts and mix gently..

6. Fill the muffin cups with the mixture and bake for 20-25 minutes., until a toothpick comes out clean.

7. Allow to cool before serving.
